Kasian Chicken!

I love to find a good, easy, healthy, delicious new recipe! A friend shared this one with me and I made it for the first time last night. I had a party in my mouth and it was fabulous!

Recently, I have been trying to eat Gluten-Free so for the rice I used Zatarain’s Yellow Rice.

Here is what you will need:

Boneless skinless chicken breasts cut into bite size pieces
Soy Sauce
Olive Oil
Hoisin Sauce
Ginger
Garlic
Fresh Veggies (your choice)
1/2 to 1 cup of chopped Mango
Corn starch (if needed to thicken sauce)
Cooked Rice

Marinate chicken in soy sauce for a bit.
Stir fry chicken on high in 2 tbs of oil with 1-2 tbs of Hoisin Sauce until chicken is done. Put aside along with liquid. Grate a bit of ginger and garlic into the pan with 1 tbs of oil and add veggies ( I use green peppers and fresh green beans). Add chopped mangos. Stir fry on high until veggies are tender, add back in chicken and a couple more spoons of Hoisin Sauce and a spoon or two of corn starch to thicken the sauce if needed.

Serve over cooked rice.

  2. we eat Zatarain’s gumbo mix adding sausage and shrimp and Zatarain’s ‘jumalia’ mix also adding sausage so, I will have to try this recipe… we do a chicken n rice similar to this but not yelow rice, I’ll have to try that, yummy!
