Recently, I have been trying to eat Gluten-Free so for the rice I used Zatarain’s Yellow Rice.
Here is what you will need:
Boneless skinless chicken breasts cut into bite size pieces
Fresh Veggies (your choice)
1/2 to 1 cup of chopped Mango
Corn starch (if needed to thicken sauce)
Marinate chicken in soy sauce for a bit.
Stir fry chicken on high in 2 tbs of oil with 1-2 tbs of Hoisin Sauce until chicken is done. Put aside along with liquid. Grate a bit of ginger and garlic into the pan with 1 tbs of oil and add veggies ( I use green peppers and fresh green beans). Add chopped mangos. Stir fry on high until veggies are tender, add back in chicken and a couple more spoons of Hoisin Sauce and a spoon or two of corn starch to thicken the sauce if needed.
Serve over cooked rice.
